
Looking for a great side dish? This is my mother-in-law's cole slaw recipe. She calls it "freezer" cole slaw because it can be frozen for use at a later time. If you make the recipe according to the directions you will have much more than needed for one meal. Simply put it into a freezer safe container and you have it preserved for another dinner sometime! Or you can cut the recipe in half. Whatever suits your plans. It tastes yummy!
Freezer Cole Slaw
Ingredients
2 medium heads of cabbage, chopped and shredded
1 tablespoon salt
1 large red bell pepper, finely chopped
1 1/2 cups granulated sugar
3/4 cups apple cider vinegar
1/4 cup water
1 teaspoon celery seed
1 teaspoon mustard seed
How we make it
Chop and shred the cabbage in a food processor.
Mix cabbage, red pepper and salt together in a large bowl and allow to stand for an hour in the refrigerator.
Mix the remaining ingredients together in a small saucepan and bring to a boil. Allow it to cool afterward.
Pour cooked ingredients over cabbage and mix well. Reserve what is needed for your next dinner meal and place the rest into freezer safe conatiners and and place in freezer.
