Try this delicious, savory salad this holiday season or any time! It makes a terrific side for any meal!

Holiday Quinoa

Ingredients

2 cups of quinoa
2 cups of vegetable broth
1/4 cup of olive oil
1 teaspoon of white wine vinegar
2 teaspoons of curry powder
1/4 teaspoon of turmeric
1/4 teaspoon of cayenne pepper
1/2 teaspoon of sea salt
1 teaspoon of black pepper
1/2 cup of grated carrot
1/2 cup of grated zucchini
1/2 cup of chopped parsley
1/2 cup of cranberries
1/4 cup of blanched sliced almonds
3 scallions, chopped
1/4 cup of diced red onion

How we make it

Cook quinoa according to directions, substituting vegetable broth for water.

In a blender add olive oil, vinegar, curry, turmeric, cayenne, sea salt and pepper.

Pour over the cooked quinoa. Add the remaining ingredients and mix well.

Taste and adjust seasonings as desired.



This delightful salad can be served warm, at room temperature or even chilled!
