Raw Carrot Cake Chews

Described as “intense” by more than one person, these delicious chews are a healthier alternative to snacks and desserts.

These delicious treats were a big hit this holiday season. They are so flavorful - sweet yet spicy; savory and incredibly tasty; intense yet...well, intense!

Raw Carrot Cake Chews

Ingredients,

1/2 cup dry “old fashioned” oats plus 2 tablespoons reserved
1/4 cup raw carrots
1/4 cup pitted Medjool dates (about 4 moist dates)
1/8 cup almonds
1/8 cup walnuts
1/4 cup raisins plus 1/4 cup reserved
3 tablespoons brown sugar
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie seasoning
1 teaspoon vanilla extract

How we make it

Blend the oats and carrots in a food processor for about 10 seconds.

Then add everything else except the reserved ingredients and blend for another 20 seconds or until incorporated. Don't overblend.

Remove the “dough” and, by hand, stir in the reserved oats and raisins.

Form into a dozen small bite-sized balls. If needed, refrigerate or freeze the “dough” for 15 minutes to make it less sticky and easier to work with when serving. Store in refrigerator. Enjoy!
