Red Quinoa and Avocado Salad

This terrific salad is sure to please your family or dinner guests! It's a healthy blend
of whole grain and tasty vegetables that makes for a hearty, delicious,
low fat dish.
Quinoa is often touted as one of the "Superfoods". It is very nutritious. Its protein content is very high and unlike wheat or rice (which are low in lysine), quinoa contains a
balanced set of essential amino acids for humans, making it an unusually
complete protein source.
It is a good source of dietary fiber and phosphorus and is high in magnesium and iron as well. Quinoa is also gluten-free and easy to digest. All we know is that we love quinoa and think you will too.
So give this salad a try - you'll be glad you did!
Red Quinoa and Avocado Salad
Ingredients
1 pkg.(7 oz.) Red Quinoa, cooked per pkg. directions
and chilled
1 pkg.(12 oz.) frozen sweet corn, thawed
1 cup finely chopped fresh cilantro
1 cup green onions, thinly sliced on the bias
2 plum tomatoes, diced to 1/4 inch (about 1 cup)
2 avocados, peeled, pitted, cubed small
1/2 cup lemon vinaigrette
1/2 tsp. salt
1/2 tsp. pepper
How we make it
Add cooked, chilled quinoa, corn, cilantro, green onions,
and tomatoes to mixing bowl.
Fold in the avocados and dressing; mix until well combined.
Season with salt and pepper and serve.
Serves 10
Per serving (about 1 cup): 310 calories, 1/4 cup vegetables,
1 whole grain, 27g carb, 4g fiber, 5g protein, 9g fat, 1g
saturated fat, 0mg cholesterol, 240mg sodium.
