Healthy Vegetarian Lunch Ideas
for Brunch, Lunch or In-Between

Let's do lunch!

Hmmm...what does that mean exactly? Oh well - here are some healthy vegetarian lunch ideas and recipes we found very tasty. They could be used for a light brunch or a healthy lunch...doesn't matter...they're great! And we think you'll find that vegetarian lunch recipes don't have to be too complicated to be delicious. Enjoy!




This is a great sandwich recipe contributed by Anne Flasser.
We're not exactly sure where the name comes from but it is a
terrific take on barbeque or a hot sausage dish.

Jom Butt

Ingredients

1 lb. of vegetarian Italian sausage
1 large onion
2 green Bell peppers
1 - 2 large potatoes
1 can Italian style diced tomatoes with juice

In a small skillet, fry the sausage until it is heated through and lightly browned. Break it into small pieces. Meanwhile, cut the onion, pepper and peeled potatoes into small cubes. Place these in a small pot or saucepan along with the tomatoes and simmer until the potatoes are done. Mix in the sausage and allow to simmer for a couple of minutes more just to insure all ingredients are warmed through. Serve on fresh hard rolls.

This recipe makes about 6 sandwiches and is delicious served with whole grain Sun-chips and apple slices.







This recipe is tasty and healthy - a real "keeper"!

SAUSAGE FRITTATA WITH TOMATOES

Ingredients:

8 oz. veggie sausage crumbles
Note: If you can't find sausage crumbles use
Morningstar sausage patties. Break 'em
up in small pieces.

6 eggs
1/4 cup water
1/4 teaspoon sea salt
Dash of hot pepper sauce
1 medium-size tomato, sliced
2 tsp. minced fresh basil or dill or
1/2 tsp dried basil or dillweed
Fresh-ground pepper to taste

In a medium-size non-stick skillet, cook sausage overmedium heat until slightly browned. Meanwhile whisk eggs with water, salt and hot-pepper sauce in a medium-size bowl until blended. Pour over sausage. Reduce heat to low, cover and cook about 10 min. or until eggs are set. Arrange tomato slices on top; sprinkle with basil and pepper. Cover and cook 2 more minutes to heat the tomatoes slightly.

When ready to serve, slice and remove from skillet with a pancake turner. Serve with sliced fruit (apple, pear or kiwi). Delicious!

The Vegetarian Way

A-gg Salad

Ingredients:

1 container of x-tra firm tofu
1 cup of Vegenaise
1 tbsp. onion powder
1 tbsp. of dill weed
1/4 tsp. of French's Yellow Mustard

1. Open, drain and press the tofu
2. While it's draining, mix all of the other ingredients
in a small or medium bowl and chill.
3. After the tofu is drained, cut it into cubes about 1/4"
to 1/2" - hint: if you make the cubes irregular and vary
the size a bit, it looks more like egg white!
4. Mix tofu into the Vegenaise mixture.

You can eat it right away or chill it for a few hours to let the flavors blend. This is amazing on pumpernickel bread!

Quick South of the Border Burger

Ingredients:

2 Morningstar FarmsŪ Spicy Black Bean Veggie Burgers
1 Avocado
About 1 to 1 1/2 cups of baby spinach leaves
1 medium tomato, sliced
2 Thomas' Whole Wheat Mini Pitas
2 tbsp. Picante or Salsa

1. Grill or heat the Morningstar FarmsŪ Spicy Black Bean
Veggie Burgers in a skillet
2. Peel and slice avocado into thin (1/4" slices)
3. Slice pitas all the way through so they resemble a
flat bun
4. Place cooked burger on pita, top with half the spinach,
a slice of tomato and a couple of avocado slices
5. Garnish with Picante or Salsa

Serve with Garden Salsa Sun Chips!

My take: I like using pitas for burgers. First of all they taste great, they're a healthy alternative and you can still taste the burger! And of course,there simply isn't quite so much "stuff" to get through - if you know what I mean.
