Allergen Free Zucchini Muffins

These muffins are gluten, dairy, sugar and nut free and all four of my kids cannot stop eating them! When you consider the nutrient density of the ingredients, this makes for a very happy mommy! :-)
Ingredients:
2 cups Gluten Free All Purpose Baking Flour (I use Bobs Red Mill)
1 teaspoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons xanthan gum
2 ripe bananas
3 Tablespoons unsulphered molasses
1/2 cup unsweetened applesauce
2 teaspoons apple cider vinegar
1 large zucchini, grated
2 handfuls golden raisins
Combine flour, cinnamon, baking soda and powder and xanthan gum in a mixing bowl and set aside.
In a blender, combine bananas, molasses, applesauce and vinegar until smooth.
Mix wet ingredients into dry ingredients, then fold in zucchini and raisins.
Fill greased muffin tins and bake at 375F for 20 minutes.
Makes 12 muffins
