Asparagus Roll-ups
Ingredients
1 large bunch of fresh asparagus
1 large loaf of wheat bread
8 oz. of softened cream cheese
3 oz. of shredded mozzarella cheese
4 Tbsp. of melted butter or Extra
Virgin Olive Oil
How we make it
Wash and lightly steam the asparagus*
* Only steam about 2 or 3 minutes so
asparagus isn't over-cooked.
Meanwhile, cut the crusts off of the bread
slices. Use a rolling pin to roll each slice flat.
Mix cheeses together and spread on each bread
slice.
Place a spear of steamed asparagus on each
slice and roll it up.
Place with the seam down on a lightly greased
cookie sheet.
Brush each "roll-up" with melted butter or EEVO.
Bake at 325 degrees for about 15 minutes.
Cut into bite-sized pieces and serve warm.
