Baked Vegetables – Serves 2
Ingredients
2 large potato
2 large onions
2 large carrots
3 table spoon olive oil
Black pepper
Salt desired
1 teaspoon sugar
Preferred herbs
1 cup oats
1 cup milk
Roasted almonds or nuts of any choice
Method
1. Cut potato, onions and carrots into desired size
2. In a bowl add the cut vegetables, olive oil, black pepper, salt and sugar and herbs, mix well. Add the vegetables and leave it for about 1 hour to be seasoned.
3. Add oats and milk to the marinated vegetables and blend them well.
4. Place them in a preferred baking utensil and bake till the potato is well done.
5. Add roasted nut to the top and serve.
