
Black Bean Salad
Ingredients
1 (15 oz. can) black beans, drained
1 (16 oz. can) corn, drained
1 medium fresh tomato, seeded and
chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 garlic clove, minced
1/2 cup red onion, chopped
1 tsp. cilantro
1/8 cup extra virgin olive oil
1 tsp. lime juice
3 Tbsp. red wine vinegar
1/2 tsp. salt
ground black pepper to taste
How we make it
In a large mixing bowl, combine the bell peppers,
onion, garlic, cilantro and corn. Toss to mix well.
Add tomatoes, olive oil, vinegar, lime juice and salt.
Mix thoroughly again.
Add the black beans and toss to mix well once again.
Chill for at least an hour. Serve with refried beans
and tortilla chips.
