Broccoli, Walnut and Tofu Stir Fry

A delicious combination of lucious green broccoli, chopped walnuts, colorful red peppers and golden browned tofu make for a nutritious meal in less than 30 minutes!

Broccoli, Walnut and Tofu Stir Fry

Ingredients

3 cups of broccoli florets
2 - 3 Tbsp. sesame oil
1/2 cup of chopped, red pepper
1/2 cup of chopped walnuts
2 Tbsp. of soy sauce or Braggs
1 Tbsp. rice wine vinegar
1 lb. extra firm tofu, pressed and
cubed.

How we make it

In a small skillet, heat olive oil over
medium-high heat. Add the cubed tofu and
sauté until golden brown. Set aside.

Add the sesame oil to a medium sized
skillet and heat over medium-high heat.

Add the walnuts and sauté for 2 to 3 min.

Add the broccoli florets and sauté for 3
to 4 minutes.

Add in the soy sauce or Braggs and vinegar
and sauté another minute or two or until
the broccoli is fork-tender.

Add in the red pepper and tofu and stir thoroughly.
Allow to cook just long enough more to heat through.

Serves 3 - 4

Note: This dish is an excellent side but also makes
for a complete main dish served with a side of fresh fruit
and some soft, "buttered" rolls.
