Broccoli-Cranberry Slaw

My daughter and I have been experimenting with the classic broccoli slaw recipe for years and have come up with our own unique twist: cranberries!

We love this recipe because it's easy and quick to prepare. Warning: There are rarely any leftovers!

Ingredients:

1 tbsp of butter or oil
1/2 cup of sliced almonds
1 package of broccoli slaw (available in the produce department near the bagged salads)
3 scallions, sliced
1/2 cup of dried cranberries
1 package of oriental flavor ramen noodle soup
Seasoning pack from soup mix
2 tbsp of light brown sugar
1/2 tsp of salt
1/4 tsp of black pepper
3 tbsp rice wine vinegar
1 tbsp of soy sauce
1/4 cup of olive oil

Combine scallions and slaw in a large bowl and set aside. Break up noodles into small pieces and saute in a large skillet with almonds in melted butter over medium heat. Stir frequently to prevent burning. Once almonds are golden brown, remove from heat.

In a small bowl, combine contents of seasoning pack, sugar, salt, pepper, vinegar, soy sauce, and olive oil. Whisk together until thoroughly combined. Pour over slaw mixture and stir until sauce is incorporated. Top with cranberries, noodles, almonds and toss together. Serve immediately.

Thank you for the great comments. We love the original recipe but like the extra brown sugar and a dash of soy sauce in our version. Also, the original recipe calls for an entire bunch of green onions but we like just 3. You can add more if you like.

More importantly, the cranberries give the recipe a little tanginess that is a surprising complement to the Asian flavors.

What a nice surprise - cranberries. Makes this broccoli dish a little more fun and tasty, although I don't know how it could get any better! Ha!
