Carrot Cake Pancakes

Ingredients
3/4 c. apple sauce
1 large carrot, grated
2 c. flour plus 2 Tbsp
2 tsp. baking powder
1 c. buttermilk, milk, almond milk, whatever
1 Tbsp vegetable oil
2 tablespoons sugar
2 Tbsp. brown sugar
1 tsp. cinnamon
dash nutmeg and ginger
2 eggs
Method
Combine carrot and apple sauce, microwave for 2 minutes to cook the carrots. Combine flour, baking powder, sugar, cinnamon, nutmeg, and ginger. Stir in apple sauce carrot mix, buttermilk, oil, and eggs. Stir until smooth.
For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden brown. Serve with syrup, whipped cream, or both.

1 tsp. vanilla extract
powdered sugar to taste, about 1/2 c.
1 c. favorite syrup OR Milk
Method
Beat cream cheese until smooth. Beat in vanilla and powdered sugar. Beat in syrup until mixed
