Crockpot Stuffing

The holidays may be over but this crockpot stuffing is delicious any time!
Crockpot Stuffing recipe:Ingredients12-14 cups dried bread cubes (buy two loaves of 'stuffing bread' or just plain white or wheat bread, cut into cubes, and put out on trays to dry overnight)
1 cup butter
1 cup onion
1 cup celery
4-5 cups vegetable broth
1 tsp pepper
1-3 tsp sage (depending on your tastes)
1 tsp salt
6 dried apricots, chopped
Dry bread overnight. sautee onion and celery in butter until soft.
Mix together with bread cubes, broth, pepper, sage, salt and apricots.
Coat sides of crockpot/slow cooker with butter and pour in dressing.
Cook 1 hour on high then 4 hours on low
