Curry in a Hurry

I've been in a hurry lately, and with Holidays coming up that's not likely to change. So on nights without much time you can still enjoy a great dinner fast. (And inexpensive too!!)
Ingredients
1 can garbanzo beans, drained
1 medium onion, chopped
2 cloves garlic, minced
½ tsp. cumin
1 tsp. curry powder
1 can tomatoes, drained
½ can coconut milk (optional)
Method
Saute onion and garlic in oil until translucent. Add cumin and curry and cook a few seconds. Add the beans, tomatoes and coconut milk and simmer 5 minutes.
Serve over rice
