Fakin' Zucchini

This vegetarian adaptation of an old PA Dutch recipe is a tasty way to get more with your zucchini and summer squash!



Fakin Veggies

Sometimes a departure from the purist can be a flavorful treat! Sure, this recipe tends to overwhelm the zucchini and squash but it heaps on the flavor, nonetheless. And it's a great way to use up some of those veggies.

Fakin' Zucchini

Ingredients

1 medium zucchini, sliced
1 medium yellow squash, sliced
4 medium white mushrooms, cleaned and sliced
About 6 strips of Morningstar Veggie Bacon
1 medium to large red onion, thick diced
1/2 tsp. oregano
1/2 tsp. garlic salt
1 Tbsp. olive oil
Salt and pepper to taste

How we make it

We microwave or sauté the bacon until lightly
crisped. Then cut it into smaller "diced" pieces.

In a small to medium skillet, heat oil and add onion.
Sauté onion until it turns translucent or tender.

Add in the "bacon" (fakin' to us) and mix with the onion.
Add the mushrooms and mix. Then add in the zucchini
and yellow squash slices along with the oregano and garlic
salt.

Continue to cook as you turn the veggies under to expose
them to the hot oil. Cook until crisp tender (about 5 minutes).

Makes 2 to 4 servings
