Grilled Vegetables
Ingredients
8 ounces, fresh, whole mushrooms
2 medium zucchini, cut into 1 inch slices
10 cherry tomatoes
1 1/2 tsp. garlic and parsley grapeseed oil
(or a "flavored oil of your choice)
1 tbsp. Italian seasoning
1 tsp. Seasoning salt
1 tsp. Italian Pepper or ground black pepprt, to taste
Grated Parmesan cheese, to taste
Toss first 8 ingredients together in a large bowl.
Thread vegetables on metal skewers; grill until crisp
and tender.
Sprinkle with Parmesan cheese.
For added nutrition add small cubes of extra firm tofu to the mix.
Press the tofu then marinate it overnight before grilling.
