Harira (Moroccan Lentil Stew)

Ingredients

2 Tbsp extra-virgin olive oil
1 medium onion, finely chopped
1 can garbanzo beans
8 cups water
4 Vegetable bouillon Cubes
1 tsp. Garlic powder
2 Tbsp finely chopped fresh cilantro
1 tsp. salt (or to taste)
2 celery stalks, finely chopped
1 can tomatoes, undrained
1 cup lentils
1 Tbsp tomato paste
1 Tbsp lemon juice
1 cinnamon stick
1/2 tsp. each sweet paprika, turmeric, ground ginger, ground coriander
1/4 tsp. each ground nutmeg, black pepper
1/8 tsp. ground cloves
¾ cup brown rice

Method

Heat oil in a large pot until hot, add the onion and cook until tender.

Add all the remaining ingredients to the pot. Simmer stirring occasionally 40 minutes, or until lentils and rice are tender.

When tender remove from heat and serve.
