Ingredients
1 High fibre whole wheat tortilla
1 egg (well beaten, salt and pepper added)
1/2 avocado
1 tablespoon sour cream/yoghurt dip
1/2 cup protein crumbles; cooked (quorn or any other)
any veggies-sauteed; green or red peppers, green peas or asparagus works really well
Method:
Heat a small amount of olive oil in non stick pan. Place the tortilla in it, let it sit for about 30 secs. Add the egg on top of the tortilla, dont worry if it flows over into the pan, as soon as cooks a little bit, you can use a spatula to fold it over onto the tortilla. Carfully turn over the tortilla, so that the agg side is now on the bottom, let cook on slow to medium heat for 2-3 mins, or as much time as you would cook an omelette.
Take the tortilla out of the pan, place it egg side up on flat surface an add sliced avocadoes, veggies, protein crumbles and sour cream. Fold over in half or roll up like a wrap. Enjoy!! one half of this wrap works as a meal for me, so go ahead and share!!
