Huevos Rancheros

For breakfast or brunch, this favorite can be as
hot or mild as you like.



Huevos Rancheros

Ingredients

2 Tbsp. extra virgin olive oil
1 small green or red bell pepper,
   finely chopped
1 small red onion, chopped
1 clove of garlic, minced
1/2 tsp. of marjoram
1 tsp. chili powder
1 can (8 oz) of tomato sauce
1 can (14.5 oz) of diced tomatoes
Sea salt and ground black pepper to taste
6 eggs
A couple dashes of your favorite hot sauce

How we make it

In a large skillet heat the oil and saute the
onion, peppers and garlic until tender.
Stir in the marjoram, chili powder, tomato
sauce and diced tomatoes. Cook until bubbly.
Lower the heat, season to taste with sea salt
and black pepper.
Crack eggs into the hot sauce and simmer over
low heat, covered, until eggs are firm.

Serves 6

* Serving suggestion: Wrap heated, refried
beans, baby spinach, sliced avocado and
shredded cheddar cheese in a warm tortilla.
Fold and place next to eggs on serving plate.
Put a couple of dashes of tabasco or hot sauce
on everything. Serve it up!
