Key Lime White Chocolate Macadamia Cookies
Recently, I was craving a citrus-y dessert (must have a Vitamin C deficiency) and so I whipped together a batch of cookies featuring key lime juice, white chocolate and macadamia nuts. The original recipe called for just 1 teaspoon of key lime juice (!) so I modified it by increasing the juice to 1/8 cup and with great results. Easy and yummy!
Ingredients:
1 stick unsalted butter, softened
3/4 cup of light brown sugar
2 tbsp of granulated sugar
1 tsp of vanilla
1 egg
2 1/3 cup of baking mix
3/4 cup of white chocolate chips
1/4 cup of macadamia nut pieces
Zest of one lime
1/8 cup of freshly squeezed lime (or bottled key lime) juice
Preheat to 350ºF. Beat butter, sugars, vanilla and egg with electric mixer until well mixed. Stir in baking mix until incorporated.
Next, stir in lime juice, white chocolate, nuts, and lime zest. Drop dough by rounded tablespoons onto parchment lined cookie sheet.
Bake 8 to 10 minutes or until set. Note: The top of the cookies will not be brown at all, but the bottom will have a nice golden brown color! Cool 1 minute; slide parchment from cookie sheet to wire rack.
Yield: 2 1/2 dozen cookies
