
Lemon Zucchini and Summer Squash
Ingredients
1 1/2 lbs. zucchini and yellow summer squash
1/4 cup fresh squeezed lemon juice
1/4 cup honey*
1 Tbsp. butter*
How we make it
Quarter or slice the zucchini and squash.
Arrange in a steamer basket and steam over
high heat - about 3 or 4 minutes, or until
squash is crisp-tender.
Meanwhile, in a small saucepan bring the
lemon juice, honey and butter to a boil.
Reduce heat and simmer for 3 minutes.
Transfer zucchini and squash to a serving dish.
Pour lemon mixture over veggies and gently
toss to coat. Serve warm.
* You can easily make this dish totally vegan by
substituting agave nectar or maple syrup for the
honey and EarthBalance for the butter.
