No-Cook Tomato Sauce

Fresh from the garden or the Farmer's Market...whip up this great tomato sauce on a day when it's just too hot to cook!



No Cook Sauce

This no-cook tomato sauce is a great way to eat fresh tomatoes with your favorite pasta. We told you about our terrific Pasta with Cold Veggies.
This dish is another version of pasta with a great cold topping...this time it's a sensational. tasty tomato sauce made without all the fuss and without the hot stove. Make it on a hot summer day when it's simply too hot to cook.

Of course, you still need to boil the pasta and we recommend a light sauté for the garlic...but that's nothin' right? At least you won't need to cook away for hours making homemade sauce.

No-Cook Tomato Sauce

Ingredients

4 cups of fresh, ripe tomatoes - preferably organic or homegrown
6 Tbsp. of extra virgin olive oil
5 fairly large cloves of garlic, finely chopped
1 cup of fresh basil leaves
1 large green bell pepper, chopped
Salt and pepper to taste

How we make it

In a small skillet, sauté the chopped garlic in 1 Tbsp. olive oil
for about three minutes, until tender.

Chop the tomatoes. It will take about 5 good sized tomatoes to
make 4 cups of fresh, chopped tomatoes. You can use a variety
of tomatoes if you choose.

Place the tomatoes, the garlic, the remaining olive oil and the
basil leaves with stems removed, in a blender or food processor.

Process to desired consistency. You can "pulse" the blender and have
the sauce "chunky" or puree it for a smoother sauce. Either way, it's
delish!

After you've finished processing the sauce pour it over your favorite
pasta and top with a sprinkling of chopped green peppers.

This sauce is delicious and tastes so fresh and raw and wonderful!
Using it this way, provides a cool pasta dish that fits a steamy summer
evening just perfectly. Enjoy!
