
Sweet potatoes are great. Besides simple starches, sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene, vitamin C, and vitamin B6.
Despite the name "sweet", they may be a beneficial food for diabetics, as preliminary studies have indicated that they help to stabilize blood sugar levels and lower insulin resistance.
The most common ways sweet potatoes are used is in candied sweet potato casserole or sweet potato fries. Sweet potato pie is a big favorite in the southern U.S. They can also be baked or fried as well as pureed and used in breads and cakes. This casserole is a break from tradition as it combines the sweetness of the sweet potato with the fruity flavor of the orange. It's a "clean" and uncomplicated dish...a nice departure from the usual sweet potato casserole.
Orange Scalloped Sweet Potatoes
Ingredients
2 medium sized sweet potatoes,
cooked, peeled and sliced
2 large oranges, 1 peeled and sliced,
the other used for the peel
and juice
1 Tbsp. grated orange peel
2 Tbsp. sugar
2 Tbsp. butter or Earth Balance
1/3 cup of orange juice
salt (to taste)
How we make it
Peel and cook the sweet potatoes.
(Once the water is boiling only
cook the potatoes for about 15
minutes, so they are still some-
what firm enough to slice.
Allow them to cool and thin slice them.
Meanwhile, grate the peel from one
large orange so that there is about 1 Tbsp.
Peel and slice the other large orange
cross-ways.
Place a layer of sweet potatoes in a
"greased" oven-safe casserole dish or glass
baking pan. Add a layer of orange slices.
Sprinkle with orange peel, salt and sugar
and dot with a little of the Earth Balance
or butter.
Repeat the process until all ingredients are
used. Pour the orange juice over the top.
Cover the dish and bake at 350 degrees F.
for 46 minutes to 1 hour.
