Quantum Wellness Cleanse

This is the page where the story continues. In our introduction we gave you a glimpse of what the Quantum Wellness Cleanse is about. This is where you can follow our progress as well as get links to some great recipes. As we mentioned before,
Kathy Freston, author of The 21 Day Quantum Wellness Cleanse has graciously permitted us to use some of the recipes developed for her book by Chef Tal Ronnen and his associate Chef Lex Townes.
We will also feature some of the recipes we create ourselves as we journey through this experience. So...here is the update ...we will continue to add as we go forward.
Day 1 - We've already told you about the delicious
TOFU SCRAMBLE we had for our starter brunch. To finish off Day 1 we enjoyed
Spaghetti with Pesto Cream.
Day 2 - Breakfast on Day 2 was simple but tasty. The night before, we made the Cherry, Coconut Breakfast Bars. Yum!
Lunch (because we work) turned out to be a light, green salad with just olive juice as a dressing.
That evening we topped off the day with a delicious edamame stir-fry served over brown rice.
Day 3 - I'm not a big breakfast person (I know I should be) so I skipped breakfast and had another green salad for lunch, this time with vinegar and oil.
The evening meal turned out to be more salad greens. However, this time they were topped with a pleasant surprise - a scrumptious Tempeh Tuna Salad.
Day 4 - Cherry, Coconut Breakfast Bar for, what else, breakfast! These things go a long way!
Lunch was left-over tempeh tuna salad over greens and a slice of rice bread.

For dinner we decided we wanted something quick and relatively easy. We created a nice quinoa and black bean dish that is sure to satisfy.
This tasty dish is very filling and full of fiber and nutrition. We sided it with coconut encrusted, broiled asparagus.

Day 5 - I can't really believe we are into Day 5 already. By now you might be thinking "Are you hungry?" or "Is the food really any good?" I can only speak for myself. Yes, I am a little
hungry. I think it is a natural occurance though. As you eat lighter and eat less (trying to exercise some portion control as well) I believe your stomach begins to shrink, be less distended. But until it does, you might feel a little hungry. If that happens to you...pick up a fresh apple or other piece of fresh fruit. It will pass.
Day 5 was another busy work day and as such it was a bar and a salad for breakfast and lunch and a simple lentil soup for dinner. Quick and easy!
Days 6,7 and 8 were "slacker" days for us! We made it as easy on ourselves as possible with quick breakfasts (more breakfast bar or cooked steel cut oats with fruit). Lunches were either leftovers or salads and our dinners were pretty simple. One evening it was a quick foccacia bread made with rice flour and topped with tomato, onion, black olives and garlic.
And on another night dinner was an edamame stir-fry over brown rice. Last night we really enjoyed the mushrooms and garlic greens over broiled polenta, tofu and tomatoes.
Which brings us to Day 9...
I personally skipped breakfast this morning (as I often do). Lunch was uneventful with a green salad and some hot broccoli-cauliflower mix.

Rather than bore you with the mundane details of what we ate every day we will complete the "cleanse", posting pertinent recipes as we go, and summarize after day 21.
For now, allow us to present a dish we thought was great. It really felt like a complete meal, although I think it would make a terrific side as well.

This dish is a satisfying and surprisingly delicious one. The flavors of the mushrooms, the garlic and the greens and the texture of the potatoes adds a "homey" feel to the dish. I could almost call it "comfort food". To be sure it will fill you up and put to rest any thoughts you might have had about not feeling satisfied eating a vegan dinner! It's great. Days 11 through 21 found us thinking that this experiment wasn't really bad at all. In fact, I may make it part of a yearly or even semi-annual ritual. We certainly got to enjoy a lot of new dishes and after the third or fourth day I can honestly say that my craving for caffeinated coffee abated. I'm not sure Ill go back to the high-test!
Not only were we able to sample the terrific recipes in The Quantum Wellness Cleanse but we were able to sample a few recipes from some of our other sources as well. The one thing we didn't do was invent any new recipes of our own this time around.
SO was it worth it? Definitely! I thought the information presented in the book was very well done. In fact, it has solidified my resolve to go entirely vegan from this point.
I lost about 4 pounds in the process, over the 21 days. I felt less bloated, and slept better than I had been sleeping. The meditations were inspiring and uplifting.
All in all I think it was a good thing. Try it! Buy the book. If nothing else you will get some great new recipes but I have a sense that you will get much more out of it than that!
That said, we finished off our 21st day in grand style. Tonight we made the Black-Bean Cakes with Lime Peppered Mayo
and accompanied those with the Roasted Beets and Gold Potatoes. A very delicious and satisfying meal and a fitting way to finish up the 21 day Quantum Wellness Cleanse.
