Not every meal has to be elaborate to be delicious! Sometimes a simple wrap can be a satisying, low fat way of treating yourself to a tasty lunch that features wholesome veggies and your favorite cheese. You can certainly go totally vegan with it as well, with some vegan cheese. One of NJR's readers recently sent this wrap recipe. Sounds like a perfect light meal to us!
Roasted Bell Pepper And Feta Wraps
Ingredients
Spinach and vegetable tortillas
Plain hummus (flavored can also be used)
Sliced roasted bell pepper
Feta cheese
1. Take a tortilla and spread a thin layer of
hummas on it. Put slightly more on one end to
hold it closed when wrapped.
2. Put a small amount of spinach, peppers and
cheese opposite of the end with the extra hummus.
3. Wrap up and cut in half for easier handling
and enjoy!
