Samantha's Meatless Meatballs

Ingredients

1 cup dried beans-soaked overnight,and cooked
Use pinto, cow beans, any plain bean-you can experiment.

1 cup cooked brown rice

1 Tbsp. dried basil
1 Tbsp. oregano
1 Tbsp. mustard
1 Tbsp. olive oil
1 Tbsp. garlic powder
Salt, pepper and chili powder to taste

1 cup black beans

Method

Puree the beans and rice until mush
Add seasonings-basil, oregano, mustard,
olive oil, salt, pepper, chili powder

When all puree'd together-put to the side

In a frying pan, combine half of a bag of TVP crumbles
and 1 cup black beans

Add garlic powder, and fry with olive oil
Fold beans, and puree together, and mold into 'meatballs'

Bake in oven at 350F for 45 min to 1 hour or
until outside is slightly crusty, and meatballs are firm.

Enjoy!

In answer to the query by a "new veggie"...

No need to be "sorry"! I wouldn't have known what it is either, a few years ago.

TVP is Textured Vegetable Protein. It looks like and is basically used as a replacement for ground beef. You can buy it in most grocery stores. Just look for their vegetarian/vegan or meatless section, usually in frozen foods. It is made by many companies but the most familiar are Morningstar Farms and Boca.

So now - go buy some TVP...make something you like and tell us about it! Good luck!

Great recipe Sam!

Samantha, a reasonably "new" veg-head has submitted her recipe for these delicious "meat"balls.

We had the opportunity to try them this past weekend. They are very tasty! Although we ate them plain I think they would be great heated through in a little marinara and tossed on a nice hoagie bun!

There are certainly many alternatives. And as Sammie says - experiment. Make 'em with one type of bean or a different herbal seasoning a couple different times and see what you come up with!
