This is a thick chili and can be served over pasta or top with shredded cheese if desired.
Ingredients:
Olive oil
(1) 28 oz. can of diced tomatoes
(2) 15 oz. cans of kidney beans
(2) 15 oz. cans of garbanzo beans
(2) green bell peppers
(1) red bell peppers
(5) cloves of garlic
(2-3) jalapenos (depending on amount of heat you prefer)
(1) large red onion
(6 tablespoons) Chili powder (I don't measure this any more, so you may want to use more)
Kosher salt (to taste)
Cracked black pepper (to taste)
Hot sauce (if extra heat is desired)
Tip: I dice onion and all peppers, plus drain and rinse all beans before warming the oil.
In large stock pot, heat extra virgin olive oil on medium. Add onions and stir until onions soften. Add green and red peppers and jalapenos. Allow a few minutes for peppers to cook. Add chili powder, garlic, salt and pepper. Stir. Add kidney beans, garbanzo beans and diced tomatoes. Stir and let simmer for 45 minutes for flavors to mingle. (Add hot sauce at any time if desired).
