Spinach Soup


Here's a light soup that's just right - a tasty blend of veggie stock, garlic, mushrooms and spinach.


Spinach Soup

Ingredients

2 cups of vegetable stock
1/8 tsp. of garlic powder
1 cup of fresh spinach, coarsely chopped
1 cup of fresh, sliced mushrooms
1/2 Tbsp. of lemon juice

How We Make It

In a large saucepan combine the vegetable stock
and garlic powder. Bring to a boil; then reduce heat.

Stir in the spinach and mushrooms.
Return to a boil; then reduce heat and allow to
simmer for 2 minutes or until spinach is tender.

Stir in lemon juice.
Simmer an additional 2 minutes.

Serve piping hot!

Makes 2 to 4 servings
