Ingredients
1T oil
1C chopped onion
1 stalk celery chopped
1 carrot, peeled & finely chopped
2 sweet pot's, peeled & diced
1 can (16oz) stewed tomatoes (no salt if possible) I used low salt V-8
juice
2C water
1t sugar
1/4t nutmeg
(can add cumin & tumeric)
chopped parsley &/or coriander (yum) for garnish
Method
Heat oil in 4qt pot on med. heat. Add onions & celery. Saute til
celery is softened (10-15 mins). Add carrots & sweet potatoes & saute
10 more mins. Add tomatoes & water & bring to a boil. Lower heat,
cover, & cook til potatoes are tender (30-35 min).
Puree soup in a blender or processor. Return soup to pot & combine
well. Add sugar & nutmeg, (cumin & tumeric if desired) & continue
cooking 5 mins. more. Garnish with above. Enjoy!
Serves 6 to 8
