Vegan "Cheeseball"

Ingredients
1 pkg. Bute Island Blue style cheese, grated
1/4 recipe of homemade vegan cheddar cheese, grated*
4 oz. tofutti imitation cream cheese
1 Tbsp. fresh chopped parsley
1/2 small onion, grated
1/2 tsp. Worcestershire sauce (just be careful and make sure you get a vegan kind, most contain anchovies)
1 small bottle pimentos
1/4 c. pecans
1/2 c. chopped mixed nuts (I use more pecans and walnuts)
Method
Beat tofutti until smooth. Mix in remaining ingredients (except 1/2 c. mixed nuts) until well combined and form into a ball. Roll in remaining nuts and chill. Serve with crackers.
Other tasty flavor twists
Chopped craisins, 1 bottle jalapenos, minced garlic, cilantro and taco powder, get creative and change it up!
