Vegan Thai Wraps

Ingredients
Tortillas
Red leaf lettuce
Sauce:
1/4 c. peanut butter
2 Tbsp soy sauce
juice from 1/2 a lime
chopped garlic to taste
1 Tbsp rice wine vinegar or white vinegar
6 leaves basil, chopped fine
1 Tbsp sesame seeds, toasted
1/4 tsp cayenne pepper
Salad:
1/2 cucumber, chopped
2 cups fresh bean sprouts
1 c shredded carrots
1/2 red onion, sliced thin
1/2 red bell pepper, sliced thin
Method
Whisk all sauce ingredients together until smooth.
Place a tortilla on a flat surface. Top with a red lettuce leaf, a generous drizzle of sauce and salad mix. Add more sauce if desired. Roll up and enjoy.
