
What do they say about the best laid plans of mice and men? These started out to be a simple vegan sugar cookie. Then the nuts came. No, not the in-laws, the walnuts - chopped walnuts. Then we thought, white chocolate chips...why not?
Of course we quickly realized that we had no vegan chocolate chips and well, the only store around that sells them isn't open on Sundays! Not to be deterred we decided to craft these delights anyway. They are what they are - vegan wanna-be's. Delicious nonetheless!
Vegan Wannabe White Chocolate Cookies
Ingredients
2 cups sugar
1/2 cup rice milk
4 cups flour
1/2 tsp. baking powder
3/4 cup of EarthBalance Natural Shortening
EnerG Egg Replacer equal to 2 eggs
1 tsp. vanilla
1/4 tsp. salt
1/2 cup chopped walnuts
2 cups white chocolate chips
How we make it
In a medium size mixing bowl, combine flour, baking
soda and salt and set aside.
In another mixing bowl, cream the sugar and shortening.
Add egg replacer and stir well.
Add rice milk and vanilla. Mix thoroughly.
Slowly add in the flour mixture and mix to form cookie dough.
After forming the dough, add in the white chocolate chips
and the walnuts. Mix again.
Roll into walnut sized balls. Drop onto lightly greased
baking sheet. Bake at 350° F for 10 to 12 minutes.
Remove from oven and place on rack to cool.
Makes 4 dozen cookies.
