Murdle's Chick Pea Salad Recipe


Here is another terrific recipe - a vegetable salad recipe - provided by our good friends at the CPCRN. We're not sure who Murdle is but if she came up with this winning combination she did a fantastic job!

It may be a bit time consuming to prep but believe me, it's worth it. The recipe calls for it to be served with garlic gread and pasta but honestly, we found it so filling and satisfying that it became the main course along with just the bread. So, do it your way - bread, no bread; pasta, no pasta - but you have to try this salad!


Chick Pea Salad

Murdle's Chick Pea Salad

Ingredients

1 can (15 oz.) of chick peas, drained
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1/2 cup of snow peas
2 Tbsp. fresh parsley, minced
1 tsp. of lemon juice
1/2 cup of extra virgin olive oil
1 small carrot, diced
1 cup of cooked black eye peas

How we make it

Combine all ingredients in a large
mixing bowl. Toss gently, but thoroughly.

Chill for at least 30 minutes.

Serve with garlic bread and pasta.
