Healthy Recipes for a delicious vegetarian breakfast
A great vegetarian breakfast is a terrific way to start the day!
We've heard that breakfast is the most important meal of the day.
So, here are some excellent suggestions that will help you get moving.
This fruit salad is a great, high energy breakfast recipe. We highly recommend it.
Breakfast Fruit Salad Ingredients 1 apple, cored and diced 1 fresh orange, sliced 1 banana, sliced 1/2 cup orange juice dash of cinnamon (to taste) 2 tsp. of raisins
Mix all ingredients and enjoy!
Egg, Toast and Fruit
Ingredients:
1 hard-boiled egg(sliced)
1 slice of whole wheat or rye toast
1 tbsp. Vegenaise (mayonaise substitute)
Sliced fruit of your choice
1. Spread Vegenaise on toast. Top with sliced egg.
2. Serve with fruit.
Jazzy Oatmeal
Ingredients:
1/2 cup cooked oatmeal
3 tbsp. wheat germ
6 dry-roasted almonds (chopped)
1 small banana (sliced)
Cinnamon to taste (we like
Watkins Cinnamon
)
1 cup of soy, oat or rice milk

Egg, Veggie Sausage, and Spinach Wrap
Ingredients:
4 large eggs
4 large egg whites
1/2 tsp. dried tarragon
1/2 tsp. dried oregano
1/2 tsp. dried basil
1 tsp. olive oil
1 clove garlic, minced (~1 tsp.)
2 cups chopped fresh baby spinach leaves
4 vegetarian breakfast sausage patties, crumbled
4 10-inch whole-wheat tortillas
4 tbsp. shredded light Cheddar cheese
1. Whisk eggs and whites with 1/4 cup cold water.
Add tarragon, oregano and basil and season with salt and pepper.
2. Heat oil in skillet over medium heat. Add garlic and cook 1 minute, stirring constantly. Stir in spinach and cook 1 minute or until spinach begins to wilt. Add sausage and cook 3 minutes or until sausage is browned. Stir in eggs and scramble until firm.
3. Heat tortillas in microwave 10 to 15 seconds or until warmed through. Divide egg mixture evenly among tortillas and top with cheese. Fold in sides and wrap like a burrito.

Here's a great Vegetarian Breakfast Smoothie to help get your day off to an energized start!Banana and Berry Smoothie from
Anne Collins
Ingredients:
1 cup plain low-fat yogurt
1 tsp. honey
1/2 banana
1 cup fresh or frozen strawberries
1 tbsp. flax seeds
Place yogurt, honey, banana and strawberries in blender
and process for 1 - 2 minutes.
Serve topped with flax seeds - or blend into smoothie

Tropical Mango Smoothie
Ingredients
1/2 cup orange juice
1/2 cup soymilk or rice milk
5 tbsp.

1 cup sliced mango
1/2 tsp. of any of these

or a combination: Coconut, Pineapple, Banana, Orange or Peach Extract
Place all ingredients in a blender. Blend well.

Ingredients 1 cup Flour 1 teaspoon Baking Powder 1/2 teaspoon Baking Soda 1/2 teaspoon Salt 1 Tablespoon Sugar 1 Egg 1 cup Buttermilk (or 1 TBSP Vinegar + enough Milk to equal 1 cup~ let sit 5 minutes) 2 Tablespoons Butter (melted)
How I make it... Using a wooden spoon, mix everything together except for the butter. Do NOT overbeat. Add butter last. Pour 1/3 cup batter onto hot griddle. Yields: 10-12 pancakes Webmaster note: You might try substituting soy milk!
