Whaaaaa? Vinegar flavor?
Oh yeah! A dash of vinegar can really give your meals new appeal and bursts of flavor!

Yes indeed. You can give your meals that little extra zing to make them even more appealing. Use a little vinegar. Use it wisely of course. You might choose the ol' standbys like apple cider vinegar or white vinegar, or you might try some of the great flavors available today - like, raspberry, lime, walnut, garlic, basil and just about every other herb yu can think of - they make them. You may need to shop around a little to find just what you're looking for but they are out there!

So what can you do with vinegar to liven up your favorite dishes? Here are some great tips...

You can add a little zip to soups, salads, pasta, sauces and just about anything else with a fash of vinegar.

  • Add a dash of rice wine vinegar or vinegar with ginger to your favorite stir-fry.
  • Drizzle vinegar with dill and Dijon mustard on Quorn Chik'n cutlets or Dominex Eggplant Cutlets.
  • A little splash of herb infused vinegars like rosemary and tarragon, on veggies and salads will really liven them up.
  • Try a little balsamic vinegar on fresh strawberries or other fresh fruits - really!
  • Sprinkle a small amount of vinegar on fresh sliced tomatoes and onions and add a dash of oregano.
We mentioned buying some of the more exotic vinegars to add to your pantry. However, you can do just as well and save yourself some money by making the vinaigrette of your choice yourself!

For Example:

In a sterilized pint jar you can -

  • Add 10 fresh chives for a Chive Vinegar that is great with mixed greens and veggie salads.
  • Put in 3 or 4 sprigs of fresh basil and 4 or 5 thin strips of lemon peel and use as a light pasta dressing.
  • Thread 2 or 3 garlic cloves on a wooden skewer and add 4 to 6 whole black peppercorns to the jar for a Garlic-Peppercorn vinegar that is terrific in Italian dishes.
  • 3 sprigs of fresh tarragon makes a Tarragon Vinegar that is a tasty addition to any vegetable salad.
  • Add in 1 cup of fresh raspberries or frozen berries without the syrup for a Raspberry Vinegar that goes very well with fruit or leafy greens.
The process then is to heat 2 cups of white vinegar (or 1 1/2 cups for the raspberry vinegar)to boiling and carefully pour it into the jar.

Cover it with a clean plastic or plastic lined lid (vinegar is very acidic and react with a metal lid). Allow it to rest in a cool dark place for up to two weeks. This will allow the flavors to mingle.

You can transfer the vinegar to decorative bottles after the waiting period...in fact, they make great gifts as well as a great addition (and inexpensive) to your own kitchen pantry.
